Pumpkins are not much used in India. We don’t know what we can make with Pumpkins. Pumpkins are rich in Nutrients like Vitamin-A, C, E. Pumpkin sweet Juice
- Cinnamon Cloves
- Honey/ Sugar
Scrape the Pumpkin first. Blend all of them together. Top with cherries and tutti-fruities for a better taste.
Pumpkin Bread(Vegan friendly)
- Pumpkin Puree
- Melted Coconut oil
- Maple Syrup (Pure)
- Coconut Sugar
- 1 flax egg (ground flaxseeds+water whisked)
- Vanilla extract
- Oat flour
- Baking Soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
Add the wet ingredients to a large bowl: pumpkin, coconut oil, maple syrup, sugar, flax egg, and vanilla. Whisk until well incorporated.
Preheat the oven. Grease the parchment paper and set aside.
Add the dry ingredients: oat flour, almond meal, baking soda, baking powder, cinnamon, cloves, nutmeg and salt.
Whisk as long as you can—the batter will be thick. Switch to folding with a rubber spatula until no flour patches remain.
Transfer batter into the prepared loaf pan. Spread it into loaves.
Using a butter knife, cut a slit down the center
Bake for 55-65 minutes. Test for doneness by sticking a toothpick into the center of the loaf. The toothpick will come out clean when the loaf is done.
Parangi Kai (Pumpkin Halwa)
- Yellow Pumpkin
- Jaggery (Powdered)
- Cashew Nuts
- Pumpkin Seeds(little)
- Cardamom Powder
Wash peel and grate a pumpkin. Set aside.
Heat a pan with ghee and fry few cashew nuts and raisins sepeartely.
Add one more spoon ghee to the Kadai and add grated pumpkin. On a low flame stir fry (5-10 mins).
Add milk and stir well. Close with a lid and cook till all the milk is absorbed and the pumpkin is cooked well. Then add the jaggery powder and mix well.
Cook till jaggery melts and is cooked well.
Add raisins, cashews and ghee.
